cathedral city is Ok, For a workaday cheddar. The extra mature is not bad at all.

To address the OP, I'm mainly for Red Leicester which I accept is very common and the colour is simply dye.
Can't deal in any form with cheese that wires are sent through, including nasally. I don't get that cheese at all.

Not sure whether to be annoyed or rather proud that 'cheddaring' has been recognised as a process which allows Cheddar to be made anywhere in the world. My Cheddar at least comes from Somerset. Coop has Wookey'Ole Cheddar which is quite acceptable.It isn't given us to know those rare moments when people are wide open and the lightest touch can wither or heal. A moment too late and we can never reach them any more in this world.
