Recording the sound off YouTube

Not sure what you mean there (I'm not IT techie).

But I can record stuff from youtube using Audacity while at the same time type messages on forums/Facebook etc and the cursor clicks/noises are not recorded.

Depends on what sort of soundcard you have
various options are possible
