    Dual booting a Mac

The new iMac is formatted with APFS. Could I partition the drive into two and reformat the second partition with Mac OS (Extended) and then install, say, High Sierra or something else that will let me run legacy programs ?

I did have a MacBook that was partitioned to run Windows when I needed a program that wouldn't run on MacOS, so I don't see why not (I got someone else to partition the drive and install Windows, so I'm not sure how it's done).
It isn't given us to know those rare moments when people are wide open and the lightest touch can wither or heal. A moment too late and we can never reach them any more in this world.

I think the big issue is whether you have a drive which is large enough to be split as you suggest. I think that Disk Utility will do it for you, if you're feeling brave! Obviously backup first.

I don't think it would work for me, but then not everyone wants to have rather more than 256 Gbytes of memory available. I know people who manage with less than 100 Gbytes.
