Last week, I couldn't get any taleggio and was recommended to try provolone instead (presumably because they had some). This was the softer, table cheese, not the parmesan-like hard variety. I'd never had it before and as Italian cheeses go - it was pretty tasty. I had it chopped in my Brussels sprouts, apple and cheese salad where I would normally have vintage cheddar. It went very well with it.
