One of the gastro-epiphanies of my life was stopping at random at a roadside restaurant whilst motoring with an Italian mate around the north side of Lake Como...

I had ravioli filled with nettle leaf and ricotta, topped with some deep-fried little sage leaves all crispy, and butter and lashings of parmesan. I've never had a more delicious or surprising meal. Unforgettable.

A store-cupboard Daube à l'avignonnaise i.e with the things I've got in the cupboard but omitting the things I could have bought this morning if I'd thought about them (pork fat, garlic sausage, brandy). Toyed with the idea of replacing the brandy in the marinade with malt whisky. Probably not. Starting now (soaking the haricots blancs, preparing the marinade) so that it can go in the oven tomorrow at breakfast time.

Regarding Lasagne, it is a north Italian dish made with pasta, ragù, béchamel and Parmigiano-Reggiano. People may have bastardised it with fish and other things, and Gwerdian readers have emasculated it for their own needs.

But it stands alone, proud, original, tradional and truly Italian, as a dish made with meat sauce.

Isn't one of the features differentiating lasagne from other pasta and meat ragu & bechamel dishes that the pasta used is flat sheets with the other ingrediants in layers, whereas, for example, a pasticcio uses tubular pasta.

Yes, I think the name does refer to the form of the pasta itself rather than the recipe: all (?) are in the plural - spaghetti, linguine, bavette, cannelloni, rigatoni, tortellini, penne, conchiglie, farfalle, um, vermicelli ...
