In my late teens I spent a few weeks working on a local mixed dairy and poultry farm. The butter made there was quite the most flavoursome I have ever tasted. The secret, apart from the breed of cows and their fine meadow diet, was that the farmer kept back half of the butter from each week's production and used it as a starter for the following week's churning. Some of the butter in the mix must have been literally years old. I doubt such methods would even be legal these days.

Actually - to be more precise, I can't remember stats. Numbers is ok - Köchel numbers, phone numbers &c. where there's a pattern etc. But plain boring stats: nope!

I have very high BP and shouldn't even be reading about butter. Awkward stuff, rock hard in the fridge, goes off if left out of the fridge. I have trained myself to eat Flora, the best of the 'spreads' in my opinion. I can then occasionally treat myself to some really fatty cheese, the sort with various things added.

You can buy excellent quality butter in the local Intermarché here which has been manufactured to spread straight from the fridge. I have it every morning with my "Festive" baguette, made from "Label Rouge" flour...it is wonderful!
