    Re. Pasteurisation, I have been trying to search out when the general sale of unpasteurised TT milk was stopped in the UK. So far, no luck Can anyone here help? I know that 'green top' can be purchased legally in England and Wales (not in Scotland), but it is hard to find.

      My local Farmers' Market sells it - this site looks as though it ought to contain the answer Bryn but I haven't found it yet.

        Apropos all the posts re cheddar cheeses esp the supermarket plastic wrapped stuff (yes, Cathedral City, I mean you), have any of you tried Lincolnshire Poacher? www.lincolnshirepoachercheese.com

        They do by mail order a selection of their cheeses which is well worth trying. Quick and well packaged delivery though a bit late now for this Christmas. Go on, give it a go!

          That's really odd because clicking on their site it turns out Waitrose sell Lincolnshire Poacher as a Strength 6 cheese - but it's packaged under their own label rather than cut on demand
          I'll purchase some and give it a try on your recommendation, but at the moment I'm well stocked with blues and goats for Christmas.

            you know those half-moon shaped Stiltons the supermarkets sell at this time of year? I've already eaten one all by myself is that not truly appalling ?

                Yes - you really should have waited at least until you reached the checkout!

                Nonsense! As Anna says, if a chap (other genders are available) can't eat a half-moon stilton at this time of year, when can s/he? We need the extra calories to survive the Winter.

                  Interesting. I'll look out for it next time we visit the hallowed halls. First met it in our local cheese shop who seem unable to get it regularly. Perhaps I now know why!

                  I should add that they also do a smoked version which is OK in small doses ie yet another kipper-flavoured cheese

                    A fine cheese discovery today in our local deli - the one I recommended to M. Vinteuil a while back - Beaufort. Made from the milk of Tarentais cattle. A great "finish".

                      As someone said to me in the queue at the farmers' market on Saturday, when I marvelled at how many people seemed to suddenly want fine cheese who never bothered at other times of the year, Christmas is the time of cheeses!

                          Well I like fine cheese at any time but said deli does get in a few extra rarities at Christmas....they also had a rare brebis cheese which I might still go back for. I once had to take a day out of an alpine hike with severe blisters and had a lift over the Col de la Bonette with an itinerant shepherd who gave me a fascinating lecture on Alpine sheep. (I then discovered how to avoid blisters, and never suffered another on many more such walks - it's all in the socks)
