    Chicory Tips

    Got given a bunch of chicory today.
    Never used it before. Anybody got any idea at all for something quick easy and tasty based on chicory?

    Here, while you contemplate, is some Chicory Tip I loved , aged 10. Sorry. Used to love trying to play the keyboard part !! Classic, if not classical ! and those haircuts....

    Had this today as endives au jambon - basically a cheese, ham and chicory gratin. The hardest part is pre-cooking the chicory to soften them and having them be not too bitter.

      Nice recipe on p. 136 of the Moro cookbook for braised chicory with Picos cheese (you can substitute Roquefort for the Picos).

      Raw, as a salad - toss with your usual vinaigrette, crumbled Roquefort and broken walnuts.

        ... that sounds good.

        The other classic chicory salad is with oranges, which is excellent.
