All the time? That explains a lot.

Does evaporating simply mean the level in the bottle goes down very quickly?

              Venison and red wine

              Mature cheddar and red wine

              Lasagne and red wine

hmm ... seems to be a pattern emerging

Same with pubs, they don't smell like pubs anymore.
You can say that again. A long time ago,as wee lads, my friends a I were told off for bringing our fish and chips into a Gateshead pub. Not because the pub sold food but a) because of the smell and b) because the fat would make the beer go flat! That was when pubs were pubs, and S. & N. pubs were more so.

... well, if it was one of those little round Portuguese custards, a small glass of a sweet fortified red wine wd be a distinct possibility
