    Clootie dumplings certainly are boiled to death. As for heavy, I believe two people were sometimes required to move them.

    It's worth noting too that in common with many Scottish foodstuffs that we've discussed here and elsewhere, sliced clootie was often fried for breakfast the next day.

    PS Bought the ingredients today - two batches of tablet to be made tomorrow.

                Noo! I have some Mcsween's (Guardians of Scotland's Heritage it says!) haggis slices, to be fried with dry cure bacon from butcher, tomatoes and Burford Brown eggs! Brunch, tomorrow!

                  Sadly my trip to Aberdeen today has been cancelled
                  so i'm getting a little worried about the level of the Smokie pile in the freezer ..........

                        Yes, saly, that's exactly right. Small computers chopped up (some people put them through a food processor, but they're not as crunchy) and carefully heated with sweetened condensed milk, milk, sugar, and butter.

                        Very yum!

                            I'd say suet is essential for the right degree of mouth appeal. Delia uses butter, but it just isn't the same. Eating cold bread pudding with cold Bird's custard straight from the fridge is one of the joys of life. Incidentally, has anybody made their Christmas puddings yet? Mine were made last weekend to give them plenty of time to mature.
