When I pounced on the first batch I saw, the stall holder was keen to know what on earth I do with them...I duly told him!

One of the lesser known root vegetables, salsify is also known as oyster plant because it tastes slightly of oysters. It has a beige-white skin and looks similar to a long carrot in shape.

Funny you said that, I was about to chip in (as it were) that I've never seen a parsnip south of the Channel - and when various French relations have been over e.g. at Xmas, they have been unanimouly bemused by the 'carottes blanches' with their 'goût bizarre' ... Is it such a northern thing?
