mangerton: I think the inclusion of sugar was the belief that tomatoes were somehow bitter when cooked. I find, with tinned soups, Heinz are the worst for the quantity of sugar included, best soups are in fact Baxters, checking the labels very few of their soups contain sugar.
Yes, there certainly was that belief about tomatoes, but tomatoes were never added to Scotch broth, as there weren't any in granny's hieland hame in the middle of winter. Leeks, carrot, turnip, kale, and barley of course, would be added to a stock made from mutton.
Agree about Baxters - excellent soups, and their other products are good too.

Agree about Baxters - excellent soups, and their other products are good too.
Baxters, like other Scottish products I consume, like Nairns Organic Oatcakes, are really wholesome and tasty. My weakness for Tunnocks products is to my eternal shame ...
Edit: Crikey, only just seen the above posts! Well, I think mangertons's broth sounds fine, Amsey's obviously not my type, and there is a question mark over Caliban. So, I think I'll go offline before it becomes more complicated!
