      Raymond Blanc thinks brown sauce is wonderful and now uses it in his cooking:

        By "brown", I take it he means "HP", which is, of course, Dutch*, these days. Surprised that he did not jump on board while it was French (Danone, itself originally Spanish).

          To quote numerous chefs on the BBC "other brown sauces are available". Blanc has also published his own recipe for making brown sauce, so he may use that rather than HP, or any other makers' brown sace.

            These we have loved: Cheddar cheese and tomato with plenty of salt and pepper on old-fashioned English-style baguette as served by the sandwich bar round the corner from the old Guildhall School.
            Pretty much any sandwich but especially the Prawn and Salad version made at the sandwich shop in Shaftesbury Avenue just off Piccadilly Circus.
            Currently any sandwich made by my wife using good sourdough bread eg cheese, beetroot, lettuce, onion, cornichon and a hint of mayonnaise or salad cream, herbs of choice and a little seasoning.

              Gosh you are clever. But M Blanc means:

              "The ingredients are: 200g pitted dates, 700g Bramley apples, a pinch of ground allspice, a pinch of ground ginger, a few gratings of nutmeg, 140g dark brown sugar, 100ml Cabernet Sauvignon vinegar and 100ml red wine vinegar ...."

                      Recently, I've taken to making this sandwich, except using fried chilli halloumi instead of the sausages. Delicious...

                            Ah, sandwiches..... ham and mustard, bacon dripping with butter and garlic, chicken salad with Lucy's French Dressing.......
                            Hot Chip butties on foccaccia with garlic lurpak and the late movie! How the brain was sent reeling from chomping the carbs....

                            A poignant memory if one cannot, any longer, eat any bread. Not even gluten-free....(not that this ever tastes of anything at all....
