I usually have a bowl of Greek yoghurt, with fresh fruit (usually a nectarine, but sometimes a pear or a banana) and Greek honey, accompanied by a cup of coffee.
However, if we have had sausages the night before, I’ll save one of the cooked sausages for breakfast. I will fry some chopped onions until soft, and then add chopped tomatoes, salt and paprika. Once these have cooked down, I’ll add a sausage, chopped into slices, break an egg over the top, and cover until the egg has been cooked in the tomato/sausage sauce. Serve with a slice of hot buttered toast. Lovely
