    My son describes it as " the most boring pudding of all time " . Then again he has never had semolina or sago.

      Holed up in France last summer during house renovations here, this became the (somewhat addictive) dessert of choice:



      Creamy rice laden with real vanilla, and a bed of caramel à la crème caramel - delicious, and a world away from the stodgy tasteless ‘rice pudding’ I remember from 1960s childhood....

              We would not have pasta without it. If you want to make pasta from scratch, semolina is the flour you need.

                  Semolina was a fairly frequent pudding when I was a child. It was just about tolerable with a large spoonful of home made jam stirred through. For some reason I found both the taste and texture unpleasant. These days I think semolina as flour is used more for baking, something not open to me now as it's wheat based.

                      Definitely in its dry form - it is useful in adding a bit of crunch to shortbread for example.

                        Yes, making a semolina pudding from dry semolina is infinitely better than using tinned semolina, which you can get from Tesco (I think). It's a bit like the difference between proper rice-pudding and the tinned variety. I think Ambrosia call their tinned stuff 'Creamed Semolina'.

                                It is possible to get salted caramel rice pudding in the UK, but the one time I had it, it managed to be both stodgy and sickly sweet.
