That's the first of the Christmas cakes in the oven. Delia Smith's recipe in her book of cake baking, except I soaked the dried fruit in more brandy than she says, and in the next six weeks it will receive plenty more. Hic
I've not attempted Christmas puddings - you can get good bought ones. My mother used to make me a cake, but it got beyond her a few years ago, so I returned the favour & started making one for her. She died in April but I think I'm now committed to making one for my partner's son & his partner, as well as our own.
I shall now reveal the legendary Barbirollians Christmas Pudding recipe with its secret ingredient - carrot
This makes 2 puddings
8oz currants
8oz sultanas
8oz raisins
4ox mixed fruit
1 large carrot
6oz of suet or vegetable suet
4oz white breadcrumbs
nutmeg to taste
1teaspoon mixed spice
6oz muscovado or molasses sugar
4oz self -raising flour
3 eggs
a quarter of a pint of pale ale
Mix together all the dry ingredients . Grate the carrot and add , then add the eggs beaten together with the pale ale .
Put into two well greased pudding basins - cover each nwith two layers of foil and then tie up in a tea towel.
Boil for 6 hours .
Leave to cool ,remove foil and tea towels and replace with clean foil and cloths .Keep in a cool dark place .
On Christmas Day boil for an hour and a half . Stick in a sprig of holly , pour over a small ladleful of warmed brandy and flame and serve with brandy butter, cream or custard to taste .
Hmmmm.. Sounds a lot like the recipe my mum uses..carrot is key to her mix.
Don't think she uses ale though.
And I have to say her recipe is absolutely fantastic, never had a shop bought one that was even close.
