          I have a foodie dilemma. I am improvising a chicken dish with red peppers and casata. Should I add Marsala or Madeira? Is there any difference other than giving it an Italianate or Spanish slant?

            Dost tha mean passata lad? Sieved tomatoes?

            Re your questions I'd go for the one that you have most of - if they're both new bottles go for Madeira ... but don't ask why

              No idea mate except I wouldn't serve casata with chicken

                Passata it is. Mrs R threw me with her freezer labelling.

                    My goodness, you blokes are but Innocents Abroard when it comes to the Culinary Arts. For all your Fine Dining out, you don't know diddley-squat when it comes to conjuring in the kitchen do you?

                            Don't you mean an oik? I admit I am, unlike you O fair one, a mere tyro in the finer points of la belle cuisine which was why I was at pains not to commit a faux pas in the choice of Madeira or Marsala. All I can remember is that Delia seems to advocate the use of one, or is it the other? As it was I got my lycra in a twist over my casata (or is it cassata?) and my passata and have ended up looking very silly indeed.

                            Somewhere, if you scroll back (gently matron) there is my N question that needs answering. I need to be up at the crack tomorrow and must hence to bed.
