I have a foodie dilemma. I am improvising a chicken dish with red peppers and casata. Should I add Marsala or Madeira? Is there any difference other than giving it an Italianate or Spanish slant?

Re your questions I'd go for the one that you have most of - if they're both new bottles go for Madeira ... but don't ask why

No idea mate except I wouldn't serve casata with chicken

Passata it is. Mrs R threw me with her freezer labelling.
