I've been messing around with Mefistofele, thinking that you'd chosen Arrigo Boito, Verdi's librettist who also composed. I know that his best known Opera is stuffed with Aves and Salves but even its original, heavenly length of five hours didn't include a stabat mater. And.. dammit... his birthplace lies in Veneto.

Busoni is from Tuscany and wrote a stabat mater but I don't know about the rest, not really 'highly regarded' for this part of his repertoire, though I hold him in high regard in general.
