There were no big bits of bacon in it so I suspect crispy bacon was almost pulverised and mixed into the brioche dough with the sage
Do you think liquid nitrogen was employed in zapping the bacon and then pulverising into a powder, ditto the sage, or could you see flecks of sage or did you merely savour the flavour?
I ask, because I am geared up to do this tomorrow but I only have fresh sage and do not have my chemistry set anymore! I lent it to Heston.

There were no signs that I can recall of flecks of anything so I suspect pulverisation. That said, the bread made its way to my gob with such speed that I was unable to inspect it thoroughly!!
Must start thinking about U (not that I'm not always thinking about U Anna )... been rather busy here! Plus going out in an hour or so..
