....measured tablets [sometimes flavoured] of [wait for it] rennet from a cows stomach which solidify milk, to make into Junket (set milk curds, - bit of sugar and scrape of nutmeg yum) or CHEEEEESE....most of offers seem to be for large quanities 100 litre n'such, didn't immediately find any for small quantities

The animal rennet comes from calves' stomachs as they use it to digest milk, and grow out of it as they move onto an adult diet. For obvious reasons it's not favoured by vegetarians and the majority of ordinary cheese in this country is made using an enzyme produced from yeast by genetic modification, and will be labelled as suitable for vegetarians. There are plant alternatives also (some of which I believe have been used for centuries as rennet wouldn't always have been available) but not used in volume cheese production as yet I don't think.
As an aside I always had to bite my tongue when customers at the deli counter I worked on would ask for vegetarian cheese and witter on about being vegetarian as they didn't like animals being killed, in blithe ignorance of the calf killing involved in the making of their 'vegetarian' cheese - to ensure continued lactation of dairy cows.

Yeah, I am aware that the egg and particularly the dairy industries are terrible. I was vegan for three years.

Linking both the slogan ‘go to work on an egg’ and remember the milk vending machines - we used to call them ‘iron cows’ which sold cartons of milk and one choice was strawberry flavoured milk.

Indeed so. And I never stopped using them (except in very cold weather!)
We were early getting in on hi tech recording. The microphone is what we used to record off the record player, complete with all the external sounds of buses going by and grandfather clocks chiming.
