Jenny Setchell's very entertaining Organs and Organists: their inside stories has a couple of pages on such things. One of them can be viewed here - scroll down past the photos of organ pipes and stop knobs.

My favourite is Eggo Gamba, which I encountered on the "Swel" division of an organ in Franschhoek, South Africa. It sounds like something that ought to be accompanied by chips and possibly pineapple, but it turns out to be a perfectly standard stop in SA.
