I recall learning many of the Mozart, Haydn and Beethoven symphonies by playing them as piano duets.

Some of Bruckner's Symphonies transcribed for Piano Duet (Nos 3 by Mahler) are available on record:
Mahler also arranged the Sixth for Piano duet, but that doesn't seem to have been recorded.
Kalmus publish a transcription of the Seventh for Piano duet, apparently by the composer himself:

August Stradal transcribed (iirc) all the Bruckner symphonies for solo piano. However, having tried to play some of his Liszt symphonic poem transcriptions (and having heard these on Toccata Classics excellent ongoing series), you would need a supervirtuoso to play them!Best regards,
